Inspectors coming today

Just spoke to Jim and he's confirmed that we have our first inspection today. Should be smooth, but let's not get too cocky.

There is so much behind the scene work that has to be done thats its almost mind boggling. Frank been busting me up to finalize the Merchant accounts and I have corporate asking me to begin thinking about menu pricing. This is just a few items and I have to keep my clients in our other business' happy. It's Monday and I need a drink....

Personal Matters

Another detour struck our project as Joel, project manager, had a family matter to deal with. Our construction company has assured us that they have someone ready to take his place. In the meantime, a personal friend of Joel will help keep the subs in-line so we don't lose any time.

Joel thank you for your hard work this past week and hopefully your family can get through this time period.

Trip downtown

March 22nd, 2010

Frank, Joel, and myself took a trip down to the processing office of the city. The suggested that the changes could be done as a revision (thank goodness), which is infinitely easier than going through the whole approval again. Yay City Officials!

So after hitting our slight snag, Joel decided to put the cart before the horse and continue framing and electrical before finishing the plumbing. You can see from these photos that alot was done in just 8 hours of work.

Snag, Snag, Snag...


March 18th, 2010


Well only three days into construction and we've hit our first snag. Seems the plumbing line (pictured) in the back of the store was trenched too shallow. Its fine for toilets but not for grease trap, underground tanks needed to collect fats and grease during food preperation and cooking. The grease trap needs gravity or a pump to push the grease to the pit. Obviously, a pump means more expense. So Joel, our project manager, suggested we dig a trench and connect to the forward line. This means the pit has to go in the front and not the rear as intended.


New drawings need to be commisioned and sent to the city for approval. Ho hum...

1st Day of Construction

We met with the project manager and handed over the keys. He will be meeting with the sub-contractors to finalize a schedule. First up is all the framing...

Started Construction in Hialeah Florida


On March 15, 2010 we finally started construction on our franchise dream of a Wingstop in HIaleah, FL. Its been two years since we began our journey. I wanted to begin this blog once two things occured, the SBA funded our project and we broke ground on the location. At least in my mind this is a point where its almost a certainty.


I'll be doing a few flashbacks to fill you in on our journey. Hopefully I can recall a few items clearly.
