Snag, Snag, Snag...


March 18th, 2010


Well only three days into construction and we've hit our first snag. Seems the plumbing line (pictured) in the back of the store was trenched too shallow. Its fine for toilets but not for grease trap, underground tanks needed to collect fats and grease during food preperation and cooking. The grease trap needs gravity or a pump to push the grease to the pit. Obviously, a pump means more expense. So Joel, our project manager, suggested we dig a trench and connect to the forward line. This means the pit has to go in the front and not the rear as intended.


New drawings need to be commisioned and sent to the city for approval. Ho hum...
