Whistle while we work...






April 28th , 2010

It's been a week and half since we got here in Dallas. After 4 days of classroom training we finally hit the store for some real training. We were slammed from day one. Man can the people of Dallas eat chicken wings.

I think I've been dreaming of cooking chicken. It might get worse as we are going to work the late shift this weekend.

I can't wait for next weeks mid - break when I can see my lovely wife and kids again. Enjoy the photos of Manny cooking and prepping :)

Bumpy, Bumpy, Bumpy...


To say the trip started on the wrong foot would be an understatement.

I made a mistake with my seat assignment and found myself in the middle seat sitting next to a HUGE smelly dude. For someone that is 6'4" this is not a position thats favorable. After 5 minutes of thinking I'm going to be using a barf bag I hear, " I think that's my seat, but do you want to stay there?". Now the noble thing would have been to stay there, but I was already cramping up and nasseua was setting in so I said "No, I'll take my seat". I'll have to be nice to rude people this week to make it up.


Flight from Miami to Dallas was like driving a shopping cart off-road. Had worse expieriences, but it just about the entire ride. Pilot climbed to 38,000 feet and then dropped to 26,000 feet trying to find a a smooth ride that was not there.


One nice thing, we got upgraded on the car, a Ford Flex. Very nice!

Grease Pit and A/C in Place

Finally the infamous grease pit is in place. This one issue just about took Frank's remaining hair off his head. You'll recall we had to adjust the placement from the back to front (underneath the parking) because of the way plumbing was laid out.


Also, all the A/C is in place including duct work. Finally actually looking like a restaurant.
I'll be leaving to Dallas for training today with our GM Manny. Really tough leaving the kids and Kelly, but I just have to look at the finish line and get it done.

Construction Advances



April 7th , 2010








Met with our GM and Frank and I were astonished at the progress. All gas and plumbing lines were complete and the finishing touches on the drywall were going into place. All phone lines were wired and the concrete was filled in where the dug the grease pit trench.




Man the place looks incredible even without the finshes. A/C and tiled kitchen floors are next.

Passed Inspection!


Well this week we passed our plumbimg inspection and rough. Corporate sent us appointment meeting for early May to review punch out items?

Manny, our GM, is attending a class on Food Safety management today. This is a requirement before running a retail food chain. I have my class next week!
